What Type of Wok Should I Buy?
We have all been told that old saying, You get what you pay for, right? Well, this is one of those rare cases where that doesn't apply as most all of our Wok's are extremly affordable and premium quality. There is no substitute for a high quality wok when cooking certain recipes, they conducts heat evenly and are perfect for the stir-fry and chinese recipes that are so common with todays healthy eating diets. Most Asian cooks will swear by Carbon Steel Wok, and I have to agree, but there many other types of woks on the market today including aluminum woks, stainless steel woks, cast iron woks and even copper woks. Flat or Round Bottom?
If you are cooking with an electric stovetop your best option is to use a flat bottom wok. Round bottom woks can reflect heat back on the element, damaging it. A flat bottomed wok can also be used on gas stoves. Round bottom woks are the more traditional choice and much better suited to gas stovetops. What about Non-Stick?
With the current interest in low-fat cooking and healthy eating, many manufacturers now offer woks with a non-stick coating.
